30 Day Challenge (Day 2)

Welcome to day two of the challenge! I’ve spent many years serving others and working toward establishing a solid future for myself and for my family. I’ve learned many things along the way. One thing I know, life and the days of your life are not promised. We have no idea how long we will be alive. The last few months have caused me to reflect on what matters most. I wanted to do something fun and interesting, something I enjoyed. So many times we go through life doing what we feel is necessary, but finding no joy in what we do. Let’s get on with the fun stuff! Let’s do something that will put a smile on our faces.

Homemade Biscuits
- 2 cups flour (I used all purpose flour and whole wheat pastry)
- 2- ½ teaspoons baking powder
- ½ teaspoon baking soda
- Pinch of salt
- 1Tablespoon sugar (optional)
- ½ cup shortening, butter or margarine (I used half butter and half shortening)
- ¾ cup buttermilk (I used ¾ cup whole milk with ¾ Tablespoon lemon juice added)
Pre-heat oven to 400⁰
Mix dry ingredients, cut in your shortening or butter, add milk and mix quickly using a fork or spoon. Turn dough on a floured surface and knead a few times. Roll out and cut and bake. Bake for 15 minutes. Oven times will vary. See YouTube video for a demonstration.
